  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 5 cloves fresh garlic, minced
  • 1 tbsp Cajun seasoning
  • 2 cups fresh spinach (or frozen, thawed and drained)
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by rinsing it under cold water, patting dry, and cutting into bite-sized pieces. Mince the garlic.
  2. In a bowl, toss chicken with Cajun seasoning until evenly coated.
  3. Heat a large skillet over medium heat with oil or butter. Cook seasoned chicken for about 7-10 minutes until golden brown and cooked through.
  4. Remove chicken from skillet. In the same skillet, melt butter; sauté minced garlic for one minute until fragrant.
  5. Add heavy cream and Parmesan cheese to the skillet; stir until combined and slightly thickened.
  6. Fold in spinach and artichoke hearts; cook for three minutes until heated through.
  7. Return chicken to skillet; toss everything together until well-coated in sauce. Serve immediately over pasta or on its own.
