  • ½ cup buttermilk (or whole milk)
  • ½ cup eggnog (store-bought or homemade)
  • 1 tsp vanilla extract
  • ½ cup unsalted butter (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, salt, nutmeg, and cinnamon.
  3. In another bowl, cream sugar and eggs until light and fluffy. Add buttermilk, eggnog, and vanilla; mix until smooth.
  4. Gradually add dry ingredients to the wet mixture, stirring gently until just combined.
  5. Fill muffin cups two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
  6. Let cool before frosting with eggnog buttercream.
