  • 4 large eggs
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese

  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Place the pie crust in a pie dish and spray with nonstick spray.
  2. In a skillet, heat olive oil over medium heat. Sauté the diced onion until softened (about 5 minutes).
  3. In a bowl, whisk together eggs and milk until frothy.
  4. In a large bowl, mix sautéed onions, drained tuna, shredded cheese, fresh spinach, salt, and pepper. Fold in the egg mixture.
  5. Pour the mixture into the prepared pie crust and spread evenly.
  6. Bake for 35-40 minutes until golden brown and set. Let cool slightly before slicing.
