  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 1 can (15 oz) sweet corn, drained
  • 2 cups frozen hash brown potatoes
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, brown the ground beef with the diced onion until fully cooked (about 5-7 minutes). Drain excess fat.
  3. In a mixing bowl, combine the cooked beef and onion with the sweet corn and cream of mushroom soup; stir well.
  4. Spread half of the hash browns in the bottom of your baking dish. Layer the beef mixture on top and finish with the remaining hash browns.
  5. Sprinkle shredded cheddar cheese generously over the top. Bake in preheated oven for 30-35 minutes until bubbly and golden brown.
  6. Let cool slightly before serving.
