  • 8 oz firm tofu, drained and pressed
  • 8 rice paper wrappers
  • 1 cup bell peppers, julienned
  • 1 cup carrots, julienned
  • 1 cup cucumber, julienned
  • ½ cup fresh cilantro leaves
  • ½ cup fresh mint leaves
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp lime juice
  • 1 tsp sesame oil

Instructions

  1. Slice the pressed tofu into thin strips.
  2. Julienne the bell peppers, carrots, and cucumber.
  3. Soften each rice paper wrapper in warm water for about 10 seconds until pliable.
  4. Lay the softened wrapper on a clean surface; place tofu and vegetables near one edge and sprinkle with herbs.
  5. Roll tightly like a burrito and repeat with remaining ingredients.
  6. For the dipping sauce, whisk together soy sauce, lime juice, and sesame oil; serve alongside spring rolls.
