  • 2 medium Yukon Gold potatoes, diced (about 1 lb)

  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic. Cube the potatoes into bite-sized pieces.
  2. Place chicken breasts at the bottom of your crockpot. Layer in onions, garlic, corn, and diced potatoes.
  3. Pour low-sodium chicken broth over all ingredients until covered.
