  • 1/2 cup panko breadcrumbs

Instructions

  1. Preheat oven to 425°F (220°C). Chop cauliflower into florets and steam until tender, about 5 minutes.
  2. Let the cauliflower cool slightly, then mash until fluffy but not pureed.
  3. In a bowl, mix the mashed cauliflower with eggs, cheese, green onions, salt, pepper, and panko breadcrumbs until well combined.
  4. Shape the mixture into patties using about 1/4 cup per hash brown on a parchment-lined baking sheet.
  5. Bake for 25-30 minutes until golden brown, flipping halfway through.
