  • 1 tbsp fresh lime juice

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the salmon into bite-sized pieces (about 1 inch) and season lightly with salt and pepper.
  3. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  4. Coat each salmon piece by first dipping it in flour, then egg, and finally rolling it in panko breadcrumbs until fully covered.
  5. Place the coated salmon bites on the baking sheet and drizzle lightly with olive oil.
  6. Bake for 15-20 minutes or until golden brown and crispy.
  7. Meanwhile, mix Sriracha, mayonnaise, and lime juice in a small bowl for the sauce.
  8. Serve the crispy bites warm, drizzled generously with bang bang sauce.
