  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz penne or fusilli pasta
  • 1 cup ranch dressing
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat, then cook the chicken for 7-8 minutes per side until golden brown and cooked through. Remove from skillet and let rest.
  2. In a pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain, reserving 1 cup of pasta water.
  3. In the same skillet used for the chicken, reduce heat to low. Add heavy cream, ranch dressing, and garlic powder; stir until smooth and slightly bubbling.
  4. Slice the chicken into bite-sized pieces and add it back to the skillet along with cooked pasta and spinach. Toss until combined; add reserved pasta water if too thick.
  5. Stir in Parmesan cheese until melted into the sauce.
  6. Serve hot, drizzled with extra ranch dressing and garnished with more Parmesan if desired.
