Creamy Quinoa Salad is a delightful blend of fluffy quinoa, juicy vegetables, and a zesty dressing that elevates any meal.   • 1 cup dry quinoa
  • 1 ½ cups cherry tomatoes (halved)
  • 1 medium cucumber (diced)
  • ½ red onion (finely chopped)
  • ½ cup feta cheese (crumbled)
  • ¼ cup fresh parsley (chopped)
  • ¼ cup fresh mint (chopped)
  • 3 tbsp extra virgin olive oil
  • 3 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until fluffy.
  2. While quinoa cooks, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.
  3. In a large bowl, mix cooked quinoa with cherry tomatoes, cucumber, red onion, and crumbled feta.
  4. Whisk together olive oil and lemon juice in a small bowl; season with salt and pepper. Pour over the salad and toss gently.
  5. Fold in fresh parsley and mint. Chill in the fridge for 30 minutes before serving.
