  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Cook rigatoni according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, melt 2 tbsp of butter. Season chicken breasts with salt and pepper, then cook for about 6 minutes per side until golden brown and fully cooked. Remove from skillet and let rest.
  3. In the same skillet, add remaining butter and minced garlic; sauté for about one minute until fragrant.
  4. Pour in heavy cream and chicken broth, stirring while bringing to a simmer. Gradually add grated Parmesan cheese until melted and smooth.
  5. Slice rested chicken and return it to the skillet along with cooked rigatoni. Toss everything together until well coated in sauce.
  6. Serve immediately with additional Parmesan cheese if desired.
