Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream the softened butter until fluffy, then gradually add sugar.
  4. Beat in eggs one at a time, followed by orange zest and cranberries.
  5. Combine wet and dry ingredients until just moistened.
  6. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow cooling before frosting.
