  • 4 medium sweet potatoes
  • 1 cup fresh or frozen cranberries
  • 2 medium Granny Smith apples, diced
  • 1/2 cup chopped pecans
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 2 tbsp butter or coconut oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash the sweet potatoes, prick them with a fork, and bake for 45-50 minutes until tender.
  3. While baking, mix cranberries, diced apples, maple syrup, cinnamon, and half the pecans in a bowl.
  4. Once sweet potatoes are cool, slice them in half and scoop out the insides into a mixing bowl.
  5. Combine the sweet potato flesh with the apple-cranberry mixture and mash until smooth yet chunky.
  6. Spoon the filling back into the potato skins, top with remaining pecans, and bake at 350°F (175°C) for an additional 15-20 minutes.
