  • 1 tbsp fresh ginger, grated
  • 34 garlic cloves, minced
  • 2 tbsp curry powder
  • 2 tbsp vegetable oil (or olive oil)
  • 1 cup chopped vegetables (bell peppers and carrots)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet over medium heat, add vegetable oil. Once hot, sauté minced garlic and grated ginger until fragrant (about 1 minute).
  2. Add chicken pieces to the skillet and cook until no longer pink in the center (approximately 5-7 minutes).
  3. Stir in chopped bell peppers and carrots; cook for about 3 minutes until slightly softened.
  4. Pour in the coconut milk and sprinkle curry powder over the mixture; stir well to combine. Let simmer gently for another 10 minutes.
  5. Season with salt and pepper to taste before serving.
  6. Garnish with fresh cilantro and serve hot with rice or naan.
