  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup brown sugar, packed
  • 1 tsp cinnamon
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round or square baking dish.
  2. In a mixing bowl, cream together softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in milk until combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually blend into the wet mixture until just combined. Gently fold in blueberries.
  4. For the streusel topping, mix brown sugar, oats, flour, cinnamon, and melted butter until crumbly.
  5. Spread half of the batter into the prepared dish. Sprinkle half of the streusel on top before layering with the remaining batter and finishing with the rest of the streusel.
  6. Bake for 40-45 minutes or until golden brown and a toothpick comes out clean. Allow cooling slightly before slicing.
