  • 1 large egg
  • 1 tsp vanilla extract
  • For Rolling: 1/4 cup granulated sugar, 2 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, salt, and cinnamon; set aside.
  3. In another bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until fully combined.
  5. Gradually mix in the dry ingredients until just combined—avoid overmixing.
  6. Scoop tablespoon-sized portions onto prepared baking sheets, spacing them two inches apart.
  7. Roll each cookie ball in the cinnamon-sugar mixture before baking.
  8. Bake for 10-12 minutes until lightly golden around the edges; cool on sheets for five minutes before transferring to wire racks.
