  • 1.5 lbs boneless skinless chicken breasts
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 medium red onion, cut into chunks
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 tsp garlic powder
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic powder, cumin, salt, and pepper to create the marinade.
  2. Cut chicken breasts into one-inch cubes and chop bell peppers and onion into similar-sized pieces.
  3. Add chicken and vegetables to the marinade; mix until well-coated. Let marinate for at least 30 minutes.
  4. Preheat grill or oven to 400°F (200°C). Soak wooden skewers in water if using.
  5. Thread marinated chicken and veggies onto skewers alternately.
  6. Grill for 10-15 minutes or bake on a parchment-lined sheet for 20 minutes until cooked through (internal temperature should reach 165°F).
