  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh mozzarella cheese, shredded
  • ½ cup grated Parmesan cheese
  • 1 cup seasoned breadcrumbs
  • ½ cup fresh basil leaves
  • 1 cup marinara sauce (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Flatten each chicken breast between plastic wrap until about ½ inch thick.
  3. Evenly sprinkle mozzarella and Parmesan cheeses over each flattened chicken breast, then add fresh basil leaves.
  4. Roll each chicken breast tightly from one end to the other and place seam-side down in the baking dish.
  5. In a shallow bowl, mix breadcrumbs with Italian seasoning. Roll each chicken log in this mixture until fully coated.
  6. Bake for 25-30 minutes or until golden brown and cooked through (internal temperature should reach at least 165°F/74°C). Serve with marinara sauce drizzled on top or on the side.
