  • 4 boneless, skinless chicken breasts
  • 1/2 cup unsalted butter, softened
  • 4 cloves fresh garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp dried thyme
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Salt and pepper to taste

Instructions

  1. Prepare the garlic herb butter by mixing softened butter, minced garlic, parsley, thyme, salt, and pepper in a bowl. Shape into a log using plastic wrap and refrigerate until firm.
  2. Pound the chicken breasts to about 1/2 inch thick for even cooking.
  3. Place two tablespoons of garlic herb butter in the center of each chicken breast. Fold sides over and roll tightly.
  4. Dredge each chicken breast in flour, dip in beaten eggs, then coat with panko breadcrumbs.
  5. Preheat the oven to 400°F (200°C) and grease a baking dish.
  6. Bake for 25-30 minutes until golden brown and internal temperature reaches 165°F (75°C). Drizzle with remaining melted garlic herb butter before serving.
