  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 1 ½ cups all-purpose flour
  • 2 cups old-fashioned rolled oats
  • 1 tsp chai spice blend (cinnamon, cardamom, ginger, cloves, nutmeg)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup powdered sugar
  • 3 tbsp real maple syrup

Instructions

  1. Brown the butter in a saucepan over medium heat until golden and nutty; let cool.
  2. In a large bowl, mix browned butter with brown sugar and granulated sugar using an electric mixer. Add eggs one at a time and stir in vanilla.
  3. In another bowl, whisk together flour, oats, chai spice blend, baking soda, and salt. Gradually mix dry ingredients into wet ingredients until just combined.
  4. Cover the dough and chill for at least 1 hour.
  5. Preheat oven to 350°F (175°C). Scoop tablespoons of dough onto parchment-lined baking sheets and bake for 10-12 minutes until edges are golden and centers soft.
  6. For the glaze, whisk powdered sugar with maple syrup until smooth and drizzle over cooled cookies.
