  • 4 medium russet potatoes (about 800g), thinly sliced
  • 1 cup heavy cream (240ml)
  • 2 cups sharp cheddar cheese (200g), shredded
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup panko breadcrumbs (60g)

Instructions

  1. 1. Preheat your oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
  2. 2. Thinly slice the russet potatoes using a mandoline or sharp knife.
  3. 3. In a bowl, whisk together heavy cream, garlic powder, salt, and pepper until well combined.
  4. 4. Layer half of the potato slices in the baking dish, followed by half of the cream mixture and half of the cheddar cheese.
  5. 5. Repeat the layers with the remaining potatoes, cream mixture, and top with remaining cheddar cheese and panko breadcrumbs.
  6. 6. Cover with aluminum foil and bake for 1 hour. Remove foil during the last 10 minutes to allow for browning.
