  • 4 large eggs
  • 1 cup shredded cheddar cheese (120g)
  • 1 small onion (100g), diced
  • 1 cup bell peppers (150g), diced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Peel and dice the potatoes into half-inch cubes. Rinse under cold water and pat dry.
  2. Heat olive oil in a large skillet over medium heat until shimmering. Add diced onions and bell peppers; sauté for about 5 minutes until soft.
  3. Add cubed potatoes to the skillet, seasoning with salt and pepper. Stir occasionally for even cooking.
  4. Cook potatoes for 10-15 minutes until golden brown and crispy on the outside.
  5. Crack eggs into a bowl and whisk well. Pour over the potato mixture once they are golden brown.
