  • 8 oz fresh tortellini
  • 8 oz thinly sliced flank steak
  • 1 cup sliced bell peppers (mix of red and green)
  • 1 medium yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 cup provolone cheese, shredded
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)

Instructions

  1. Prepare all ingredients: Slice bell peppers and onions, and mince garlic.
  2. Cook tortellini in boiling salted water according to package instructions; drain and set aside.
  3. In a large skillet over medium heat, add olive oil. Sauté onions and bell peppers until softened, about 5 minutes.
  4. Add beef strips to the skillet with veggies; season with salt, pepper, Italian seasoning, and red pepper flakes. Cook until browned, about 5 minutes.
  5. Pour in heavy cream and stir in provolone cheese until melted and smooth.
  6. Gently fold in cooked tortellini until coated in the creamy mixture; let simmer on low heat for an additional 2 minutes.
