  • 1 tbsp taco seasoning
  • 8 small corn or flour tortillas
  • 1 cup diced tomatoes (for topping)
  • 1 cup shredded lettuce (for topping)
  • ½ cup shredded cheese (for topping)
  • ½ cup sour cream (for topping)
  • 1 avocado, sliced (for topping)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss cauliflower florets in olive oil, season with salt and pepper, and roast for about 20 minutes until golden brown.
  3. In a skillet over medium heat, brown the ground beef until no longer pink; drain excess fat.
  4. Stir in taco seasoning and water per package instructions; combine with roasted cauliflower in the skillet.
  5. Warm tortillas on a dry pan or microwave covered with a damp paper towel for about 30 seconds.
