  • 1 cup vegetable oil
  • 2 cups grated carrots (finely grated)
  • Optional: 1 cup chopped walnuts or pecans
  • 8 oz cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 4 cups powdered sugar (sifted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt until well combined.
  3. In another bowl, beat eggs and vegetable oil until smooth. Stir in grated carrots.
  4. Combine wet ingredients with dry ingredients and fold until just mixed. Optionally add nuts.
  5. Divide batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for ten minutes, then transfer to wire racks to cool completely.
  7. For frosting, beat cream cheese and butter together until smooth. Gradually add powdered sugar and vanilla extract.
  8. Frost cooled cake generously between layers and on top.
