Ingredients

Scale
  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons Cajun seasoning
  • 8 oz spaghetti
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1.5 cups freshly shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Season chicken breasts with Cajun seasoning. Heat olive oil in a skillet over medium heat and cook chicken for 6-7 minutes on each side until golden brown and fully cooked. Remove from heat and set aside.
  2. Boil salted water in a large pot, add spaghetti, and cook according to package instructions until al dente. Drain and reserve some pasta water.
  3. In the same skillet, sauté minced garlic until fragrant (about 1 minute). Pour in heavy cream and stir until well combined with leftover chicken juices.
  4. Gradually add shredded mozzarella cheese to the sauce while stirring until melted. Add reserved pasta water if needed for desired consistency.
  5. Slice cooked chicken into strips and toss with spaghetti in the creamy sauce until evenly coated.
  6. Serve hot, garnished with freshly chopped parsley.
