  • 1 medium butternut squash (about 2 cups cubed)
  • 4 oz soft goat cheese
  • 1 sheet frozen puff pastry (thawed)
  • 2 tsp olive oil
  • 1 tsp fresh thyme or rosemary (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Peel and cube the butternut squash. Toss with olive oil, salt, and pepper. Spread on the baking sheet and roast for 25-30 minutes until tender and caramelized.
  3. Roll out the thawed puff pastry on a floured surface to about ¼ inch thick. Transfer to another lined baking sheet.
  4. Once the squash cools slightly, spread it over the puff pastry base. Crumble goat cheese on top and sprinkle with herbs.
  5. Bake for 20-25 minutes until the pastry is golden brown. Let cool slightly before slicing and serving warm.
