Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground sausage until browned; drain excess fat.
  3. Whisk eggs with salt and pepper in a bowl, then scramble in the same skillet until just cooked through.
  4. Warm tortillas in the microwave for 15 seconds; fill each with sausage, scrambled eggs, and cheese. Roll tightly.
  5. Place rolled tortillas seam-side down in a greased baking dish. Pour salsa verde over the top.
  6. Bake for 20 minutes until heated through and cheese is bubbly. Serve topped with cilantro and sour cream.
