  • ½ cup whole milk
  • 2 cups powdered sugar (for frosting)
  • ½ cup unsalted butter, room temperature (for frosting)
  • Blue food coloring (as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, and a pinch of salt; set aside.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy (about 3 minutes).
  4. Add eggs one at a time, mixing in vanilla and peppermint extracts until well combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk until just combined.
  6. Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cupcakes cool completely before frosting them with buttercream mixed with blue food coloring.
