  • 3 lbs beef short ribs
  • 1 large yellow onion, chopped
  • 2 medium carrots, cut into chunks
  • 4 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 12 oz dark lager or stout beer
  • 3 sprigs fresh thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 325°F (160°C). Pat short ribs dry and season with salt and pepper.
  2. In a Dutch oven over medium-high heat, add olive oil. Sear the short ribs until browned on all sides (about 3-4 minutes per side). Remove and set aside.
  3. In the same pot, sauté chopped onions and carrots for about 5 minutes until softened.
  4. Stir in minced garlic and cook for another minute.
  5. Pour in beer and let simmer for 2 minutes to deglaze the pot.
  6. Return short ribs to the pot, add beef broth and thyme, bringing it to a gentle boil before reducing heat.
  7. Cover and braise in the oven for about 2.5 hours or until tender.
