  • 1 pound beef sirloin, thinly sliced
  • 8 ounces fresh cremini mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup full-fat sour cream
  • 2 cups low-sodium beef broth
  • 8 ounces egg noodles
  • 2 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Slice the beef against the grain and chop the onions and mushrooms.
  2. In a large skillet over medium-high heat, add olive oil and sear the beef strips until browned (about 3-5 minutes). Remove and set aside.
  3. In the same skillet, add onions and mushrooms. Sauté until soft and caramelized (about 5 minutes).
  4. Add minced garlic; cook for 1 minute. Pour in beef broth and Worcestershire sauce while scraping up brown bits from the pan.
  5. Reduce heat to low, stir in sour cream, return beef to skillet, and simmer for 5 minutes.
  6. Cook egg noodles according to package instructions; drain well. Serve stroganoff over noodles.
