  • 1 cup barbecue sauce
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 4 large flour tortillas
  • 2 tsp olive oil
  • 1 medium onion (sliced)
  • 1 bell pepper (sliced)

Instructions

  1. Season chicken with salt and pepper. Heat a skillet over medium-high heat with olive oil. Cook the chicken for about 6 minutes per side until fully cooked (internal temperature of 165°F). Let rest before shredding.
  2. Mix shredded chicken with barbecue sauce in a bowl.
  3. In a clean skillet, grease lightly with olive oil over low-medium heat. Place one tortilla in the skillet and sprinkle half with cheese.
  4. Spoon shredded chicken onto the cheesy side; add sautéed onions or bell peppers if desired.
  5. Fold the tortilla and grill each side for about 3 minutes until golden brown and crispy. Repeat with remaining tortillas.
  6. Slice into wedges and serve with extra barbecue sauce or sour cream.
