  • 23 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup BBQ sauce (your choice)
  • 1 lb pizza dough (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • 1 medium red onion (thinly sliced)
  • 1/4 cup fresh cilantro (optional)

Instructions

  1. Preheat the oven to 475°F (245°C) and place a pizza stone inside if available.
  2. Heat oil in a skillet over medium heat. Season chicken with salt and pepper, cooking for 6-7 minutes on each side until fully cooked (internal temperature of 165°F). Let cool before shredding.
  3. Shred cooked chicken with two forks and mix with BBQ sauce until well coated.
  4. Roll out the pizza dough on a floured surface to your desired shape and transfer to parchment paper or baking sheet.
  5. Spread additional BBQ sauce over the dough, layer on shredded chicken, mozzarella cheese, and red onion slices.
