  • 3 ripe bananas (about 1 ½ cups mashed)
  • 2 cups rolled oats
  • ⅓ cup honey or maple syrup
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth but slightly chunky.
  3. In another bowl, combine the rolled oats, baking powder, cinnamon, and salt; mix well.
  4. Add honey (or maple syrup) to the mashed bananas and mix until combined.
  5. Gradually fold in dry ingredients into the wet mixture until just combined; avoid overmixing.
  6. Pour the batter into the prepared baking dish and spread evenly. Bake for 25–30 minutes until golden brown on top and firm in the center.
  7. Allow to cool slightly before cutting into squares.
