  • 1 cup rinsed quinoa
  • 1 ½ cups water
  • 1 cup bell peppers (chopped, assorted colors)
  • 1 cup cucumber (chopped)
  • 1 cup cherry tomatoes (halved)
  • ½ cup feta cheese (crumbled)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a medium pot, combine rinsed quinoa and water; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
  3. While quinoa cooks, chop bell peppers, cucumber, and cherry tomatoes.
  4. In the baking dish, mix cooked quinoa with chopped veggies and crumbled feta.
  5. Whisk together olive oil and lemon juice; pour over the salad mixture and toss gently.
  6. Bake in the preheated oven for about 20 minutes or until warmed through.
