Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, cream the softened butter and sugar until fluffy. Add the eggs one at a time, then mix in the milk until smooth.
  4. Gently fold in the chopped apples into the wet mixture.
  5. Combine the dry and wet ingredients until just mixed; be careful not to overmix.
  6. Fill cupcake liners two-thirds full and bake for about 18–20 minutes or until golden brown. Cool completely before frosting.
