  • 2 cups low-sodium chicken broth
  • 1 cup cream of chicken soup
  • 2 medium carrots, chopped
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups dumpling mix (or homemade)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Season chicken with salt and pepper. Set Instant Pot to sauté mode; add oil and sear chicken until golden brown (3-4 minutes each side). Remove chicken.
  2. 2. Sauté onions, carrots, celery for about 5 minutes; stir in garlic towards the end.
  3. 3. Return chicken to pot; add broth and cream of chicken soup. Stir well to combine.
