  • 2 medium eggplants (about 1 lb)
  • 1 lb lean ground beef or lamb
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) whole peeled tomatoes
  • 1/2 cup creamy natural peanut butter
  • 1/2 cup crumbled feta cheese (or Parmesan)
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp sweet paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Slice eggplants into half-inch rounds, sprinkle with salt, and let sit in a colander for 30 minutes. Rinse and pat dry.
  2. In a skillet over medium heat, add olive oil and sauté onions until translucent (about 5 mins). Add garlic and cook for another minute.
  3. Add ground meat, oregano, and paprika; cook until browned. Stir in crushed canned tomatoes and peanut butter; simmer for 10 mins.
  4. In a bowl, combine feta cheese with black pepper.
  5. Layer a baking dish with eggplant slices, half the meat mixture, repeat layers ending with cheese on top.
  6. Bake for about 35 mins until golden brown. Let cool slightly before serving.
