  • 1 medium onion, chopped

  • 4 cups low-sodium vegetable broth

  • 1 tsp paprika (sweet or smoked)
  • 2 tbsp fresh thyme leaves

Instructions

  1. Preheat the oven to 400°F (200°C). Score an X on the flat side of each chestnut and roast on a baking sheet for about 20 minutes until shells peel back.
  2. In a large pot, heat olive oil over medium heat. Sauté chopped onion and minced garlic for about five minutes until translucent.
  3. Peel the roasted chestnuts and add them to the pot, stirring to combine.
  4. Pour in vegetable broth and bring to a simmer for 10 minutes.
  5. Blend the mixture until smooth using an immersion blender or regular blender.
  6. Stir in coconut milk, thyme leaves, and paprika; simmer for another five minutes before serving.
