  • 8 oz cremini mushrooms, chopped
  • 4 oz shiitake mushrooms, chopped
  • 3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 8 oz cream cheese, softened
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Clean and chop the mushrooms into small pieces.
  2. In a large skillet over medium heat, melt the butter. Add the shallots and garlic; sauté until fragrant (about 2 minutes).
  3. Add the mushrooms and cook until they release moisture and turn golden brown (approximately 5 minutes).
  4. Season with salt, pepper, thyme, and parsley; cook for an additional couple of minutes.
  5. Transfer the mixture to a food processor. Add cream cheese and lemon juice; blend until smooth. Adjust seasoning if needed.
  6. Spoon into a serving bowl or ramekin, cover with plastic wrap, and refrigerate for at least one hour before serving.
