  • 2 slices whole wheat bread
  • 2 oz sharp cheddar cheese (sliced)
  • 1 tbsp unsalted butter
  • 1 can (14 oz) diced tomatoes (preferably San Marzano)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried basil
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for an additional minute.
  2. Add canned tomatoes, dried basil, and sugar to the pot. Let simmer for 10 minutes.
  3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for another 15 minutes.
  4. Blend the soup until smooth using an immersion blender or standard blender. Return to pot.
  5. In a separate skillet, heat butter over medium heat. Assemble sandwiches with cheese between bread slices, grilling until golden brown on both sides (about 3 minutes each).
  6. Serve grilled cheese with bowls of hot tomato soup; garnish as desired.
