  • 2 tbsp fresh parsley (chopped)
  • 4 tbsp unsalted butter

Instructions

  1. Flatten each chicken breast between plastic wrap until about half an inch thick for even cooking.
  2. Season both sides with salt and pepper, then dredge in flour, shaking off excess.
  3. In a skillet over medium-high heat, combine olive oil and butter. Cook chicken in batches for about 3 minutes on each side until golden brown. Remove from skillet and set aside.
  4. In the same skillet, add chicken broth, scraping up browned bits. Stir in lemon juice and capers; simmer for 2 minutes.
