  • 4 large egg yolks
  • 1/2 cup granulated sugar (plus extra for topping)

Instructions

  1. Preheat oven to 325°F (160°C) and prepare a baking dish with hot water for the water bath.
  2. In a saucepan, heat heavy cream, nutmeg, and vanilla over medium heat until steaming but not boiling.
  3. Whisk egg yolks and granulated sugar together until smooth.
  4. Gradually pour warm cream into the yolk mixture while whisking to temper the eggs.
  5. Strain custard into ramekins and place them in the baking dish filled with hot water.
  6. Bake for 30-35 minutes until just set but slightly wobbly in the center; cool and refrigerate.
  7. Before serving, sprinkle demerara sugar on top and use a kitchen torch to caramelize.
