  • 2 large eggs, room temperature
  • 1/2 cup whole milk
  • 1 tsp mint extract
  • 2 cups powdered sugar, sifted
  • 1/2 cup heavy cream
  • 1/2 tsp mint extract (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, beat softened butter until creamy. Add eggs one at a time until smooth.
  4. Mix in milk and mint extract into the butter mixture; then gradually fold in the dry ingredients until just combined.
  5. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. While cooling, whip together powdered sugar and heavy cream for frosting; mix in mint extract to taste.
  7. Frost cooled cupcakes generously and enjoy!
