  • 12 jumbo pasta shells
  • 1 lb uncooked shrimp, deveined and peeled
  • 2 cups fresh baby spinach
  • 1 cup cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot. Add salt and cook the jumbo pasta shells according to package instructions (10-12 minutes). Drain and set aside.
  2. In a skillet over medium heat, add olive oil. Sauté garlic and sliced mushrooms until golden brown (about 5 minutes).
  3. Stir in spinach until wilted (about 2 minutes), then add shrimp. Cook until shrimp turn pink (approximately 3 minutes).
  4. Pour in heavy cream and chicken broth; simmer for about 5 minutes until slightly thickened. Stir in Parmesan cheese until melted.
  5. Stuff each pasta shell with the creamy filling and place on a baking sheet.
  6. Preheat the oven to broil; broil stuffed shells for 3 minutes until golden on top.
