  • 200g dark chocolate (70% cocoa or higher)
  • 4 large eggs (separated)
  • 100g granulated sugar
  • 300ml heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Melt the dark chocolate over a double boiler until smooth, then let it cool slightly.
  2. In a bowl, whisk egg yolks with half of the sugar until thickened. Gradually mix in melted chocolate.
  3. In another bowl, whip egg whites until stiff peaks form, adding the remaining sugar gradually until glossy.
  4. Whip heavy cream with vanilla extract until soft peaks form.
  5. Gently fold one-third of the whipped cream into the chocolate mixture, followed by the rest of the whipped cream and egg whites until fully combined.
  6. Spoon into serving dishes and refrigerate for at least two hours before serving.
