  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ¼ cups granulated sugar
  • 3 large eggs (room temperature)
  • 1 cup buttermilk
  • ½ cup unsalted butter (melted)
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 cup heavy cream (for ganache)
  • 8 oz semi-sweet chocolate (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans and dust with flour.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar until combined.
  3. In another bowl, beat eggs, buttermilk, and melted butter until smooth. Add this mixture to the dry ingredients and stir gently until just combined.
  4. Carefully fold in the shredded coconut.
  5. Divide the batter between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. While cooling on wire racks, prepare the ganache by heating heavy cream until simmering. Pour over chopped chocolate and let sit before stirring until glossy.
  7. Assemble the cake by stacking layers with ganache in-between and drizzle more on top.
