  • 2 large leeks, cleaned and sliced
  • 8 oz cremini or shiitake mushrooms, chopped
  • 1 cup shredded Gruyere cheese
  • 1 cup heavy cream (or half-and-half)
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing the leeks thoroughly and slicing them thinly. Chop the mushrooms into bite-sized pieces and mince the garlic.
  2. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.
  3. In a large skillet over medium heat, add olive oil. Once hot, sauté the leeks until soft and caramelized (about 7-10 minutes). Add mushrooms and garlic; cook until browned.
  4. Lower the heat, pour in heavy cream, and simmer for about 5 minutes. Gradually mix in shredded Gruyere until melted.
  5. Combine cooked pasta into the skillet with some reserved pasta water if needed; toss everything together until well-coated.
  6. Serve garnished with additional cheese or cracked black pepper.
