Butternut squash gnocchi is a delightful twist on traditional Italian dumplings, bringing warmth and comfort to your dinner table. These tender, sweet pillows are made from roasted butternut squash and paired with a rich sage butter sauce.   • 1 medium butternut squash (about 2 cups mashed)
  • 1 cup all-purpose flour
  • 1 large egg yolk
  • 1 tsp kosher salt
  • 10 fresh sage leaves, chopped
  • 4 tbsp unsalted butter

Instructions

  1. Preheat oven to 400°F (200°C). Cut butternut squash in half lengthwise, remove seeds, drizzle with olive oil, sprinkle with salt, and roast cut-side down on a parchment-lined baking sheet for 30-35 minutes until tender.
  2. Once cooled, scoop out the flesh into a bowl. Mix in egg yolk and salt; gradually add flour until a soft dough forms.
  3. On a floured surface, divide dough into sections, roll each into ropes about an inch thick, and cut into bite-sized pieces. Use a fork to create ridges.
  4. Boil salted water in a large pot. Drop in gnocchi and cook until they float (about 2 minutes). Remove with a slotted spoon.
  5. In a skillet over medium heat, melt butter until foamy; add chopped sage and let sizzle until fragrant.
  6. Toss boiled gnocchi in the sage butter sauce until well-coated. Serve warm, topped with grated Parmesan if desired.
