  • 1 cup green or brown lentils, rinsed
  • 1 cup chopped walnuts or pecans
  • 1 cup grated carrots
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup whole grain breadcrumbs
  • 2 large eggs (or 2 flax eggs for vegan option)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a medium saucepan, bring 2 cups of water to boil. Add lentils and simmer until tender (20-25 minutes). Drain excess water.
  3. Sauté onion and carrots in olive oil over medium heat until soft (about 5 minutes). Add garlic and sauté for another minute.
  4. In a large bowl, combine cooked lentils, sautéed veggies, nuts, breadcrumbs, eggs, salt, and pepper. Mix well.
  5. Transfer mixture to prepared loaf pan and smooth the top.
  6. Bake in preheated oven for 45-50 minutes until golden brown. Let cool for 10 minutes before slicing.
